Baked Italian Chicken in Foil with Vegetables

Ingredients:​

  • 3 boneless, skinless chicken breast​
  • 3 tsp olive oil​
  • 1 tsp salt​
  • 1 tsp black pepper​
  • 2 garlic cloves, chopped​
  • 1 yellow onion​
  • 1 red or green bell pepper​
  • 3 small carrots​
  • 1 c zesty Italian dressing​

Directions:​

  1. Preheat oven to 350 F.​
  2. Put chicken in ½ c of Italian dressing to marinade while vegetables are prepped.​
  3. Chop garlic and slice onion, pepper and carrots.​
  4. Place 1 piece of chicken in the center of a piece of aluminum foil (large enough to wrap up chicken in).​
  5. Drizzle with 1 tsp of olive oil, sprinkle with salt and pepper and arrange veggies on top of chicken.  ​
  6. Spoon 1-2 Tbsp of Italian dressing over chicken and veggies and wrap it up, sealing the foil.​
  7. Repeat steps 4-6 for remaining chicken breasts and veggies.​
  8. Place foil packets in the oven for 35-40 minutes or until chicken reaches an internal temperature of 165 F.​
