Black Bean and Corn Quesadillas

An inexpensive and versatile meal in minutes!

  • 4 Tortillas​
  • 1-2 Tbsp olive oil​
  • 15 oz (1 can) black beans, rinsed & drained​
  • 1 c frozen corn​
  • ½ onion, chopped​
  • 1 clove garlic, minced​
  • 2 c shredded mexican cheese​
  • Optional additions or toppings: cooked and shredded chicken, avocados, bell peppers, tomatoes, salsa​
  • Taco seasoning:​
    • 1 Tbsp chili powder​
    • 1 tsp paprika​
    • 1 tsp cumin​
    • ¼ tsp cayenne pepper​
    • ½ tsp oregano​
    • ½ tsp salt​
    • ½ tsp pepper​

Directions:​

  1. In a saucepan, saute the onion and garlic in a tablespoon of olive oil until tender and slightly brown.​
  2. Mix corn, beans and taco seasoning. Cook for about 2-3 minutes until mixture is warmed thoroughly.​
  3. In a separate pan, coat the bottom of the pan with olive oil. Place a tortilla on the pan and coat half with cheese followed by bean mixture. Sprinkle with a little more cheese and then fold in half. Cook at medium heat browning both sides and melting cheese.​
