An inexpensive and versatile meal in minutes!

- 4 Tortillas
- 1-2 Tbsp olive oil
- 15 oz (1 can) black beans, rinsed & drained
- 1 c frozen corn
- ½ onion, chopped
- 1 clove garlic, minced
- 2 c shredded mexican cheese
- Optional additions or toppings: cooked and shredded chicken, avocados, bell peppers, tomatoes, salsa
- Taco seasoning:
- 1 Tbsp chili powder
- 1 tsp paprika
- 1 tsp cumin
- ¼ tsp cayenne pepper
- ½ tsp oregano
- ½ tsp salt
- ½ tsp pepper
Directions:
- In a saucepan, saute the onion and garlic in a tablespoon of olive oil until tender and slightly brown.
- Mix corn, beans and taco seasoning. Cook for about 2-3 minutes until mixture is warmed thoroughly.
- In a separate pan, coat the bottom of the pan with olive oil. Place a tortilla on the pan and coat half with cheese followed by bean mixture. Sprinkle with a little more cheese and then fold in half. Cook at medium heat browning both sides and melting cheese.
