Black Beans and Rice

A simple source of complete protein

Ingredients:​

  • ½ c of black beans, rinsed​
  • ¼ fresh lime​
  • ½ c rice, uncooked​
  • 1 tsp chili powder​
  • ½ tsp ground cumin​
  • 1 Tbsp chopped green onion​
  • ½ c plain greek yogurt or light sour cream​
  • Tortilla chips for dipping

Directions:​

  1. Cook rice according to package directions.​
  2. In deep skillet, add beans, lime juice, chili powder and ground cumin. Cook over medium heat 7-10 minutes. Stir while cooking.​
  3. Remove skillet from heat, add cooked rice. Add ⅓ cup of greek yogurt (or sour cream) and green onions. Combine and pour in serving bowl.​
  4. Serve with extra plain greek yogurt (or sour cream) and tortilla chips!
