Cauliflower Tacos

Everyone will say… “What’s in these?!”

Ingredients:​

  • 1 small bag of cauliflower, chopped​
  • 2 Tbsp olive oil​
  • ½ packet taco seasoning​
  • Tortillas or hard shell tacos​
  • Desired toppings (cheese, lettuce, tomato, sour cream, avocado)​

Directions:​

  1. Put chopped cauliflower in a frying pan with 2 Tbsp of olive oil. ​
  2. Cover with a lid and cook over low/medium heat for 3-5 minutes (until cauliflower is tender).​
  3. Add ½ packet of taco seasoning of your choice and cook for another 3 minutes.​
  4. Separate cauliflower into 4 equal amounts and place in hard or soft taco shells.​
  5. Add your desired toppings! (lettuce, cheese, tomatoes, sour cream, avocado, etc.) ​
  6. If desired, add a cooked protein (tofu, chicken, beans or fish).​
