Chicken Parmesan

​Ingredients:​

  • 1 lbchicken breasts​
  • 1 c tomato sauce (more if needed) ​
  • ½ c shredded mozzarella cheese ​
  • 2 eggs, scrambled ​
  • ½ c flour ​
  • 1 c Italian seasoned bread crumbs (or panko)

Directions:​

  1. Preheat oven to 375 ˚F.​
  2. Pound chicken to ½” thickness.​
  3. Place eggs, flour, and bread crumbs into separate bowls.​
  4. Dip chicken in flour, and then into eggs, and then into breadcrumbs. ​
  5. Place chicken on a baking sheet lined with parchment paper and bake for 25 minutes.​
  6. Remove chicken from oven and cover in sauce and cheese.​
  7. Return to oven and bake for another 5 minutes, until cheese is melted and chicken is 165 ˚F.
