Loaded Baked Potato

The nutritious way!

Ingredients:​

  • 1 potato or sweet potato​
  • ½ c black beans, rinsed​
  • ½ corn, canned or frozen​
  • Salsa​
  • Olives ​
  • Sliced avocado​
  • Low-fat cheddar cheese​
  • Plain greek yogurt​
  • Sliced peppers

Directions:​

  1. Poke holes in potato and microwave on high for 5 minutes until soft.​
  2. While the potato is cooking, prepare peppers and corn. If frozen, prepare according to package instructions; if fresh, sautee in olive oil until tender, or steam on stovetop or in microwave.​
  3. When the potato is done, add cheese.​
  4. Top with black beans, peppers, corn, olives, salsa and greek yogurt.​
