The nutritious way!

Ingredients:
- 1 potato or sweet potato
- ½ c black beans, rinsed
- ½ corn, canned or frozen
- Salsa
- Olives
- Sliced avocado
- Low-fat cheddar cheese
- Plain greek yogurt
- Sliced peppers
Directions:
- Poke holes in potato and microwave on high for 5 minutes until soft.
- While the potato is cooking, prepare peppers and corn. If frozen, prepare according to package instructions; if fresh, sautee in olive oil until tender, or steam on stovetop or in microwave.
- When the potato is done, add cheese.
- Top with black beans, peppers, corn, olives, salsa and greek yogurt.
