Southwest Rice & Tofu Bowl

Ingredients:​

  • ¾ c brown rice​
  • ¼ c black beans, drained and rinsed​
  • ¼ red pepper, diced​
  • ¼ green pepper, diced​
  • ¼ c cherry tomatoes, halved​
  • ¼ block firm tofu  ​
  • turmeric​
  • pepper ​
  • olive oil​
  • vegan sour cream or plain Greek yogurt (optional)​
  • srirachaor hot sauce (optional) ​

Directions:​

  1. Boil brown rice according to the box.​
  2. Cube tofu into pieces and combine with turmeric and pepper to taste. ​
  3. In a saucepan over medium heat, pan fry tofu evenly for five minutes in olive oil.​
  4. Add diced peppers into pan and sauté for five minutes.​
  5. In a bowl, add brown rice as a base.  Top with tofu, peppers, cherry tomatoes and black beans in each corner of bowl.​
  6. Dollop some sour cream or yogurt into bowl and top with sriracha for an extra kick as desired.
