Ingredients:
- ¾ c brown rice
- ¼ c black beans, drained and rinsed
- ¼ red pepper, diced
- ¼ green pepper, diced
- ¼ c cherry tomatoes, halved
- ¼ block firm tofu
- turmeric
- pepper
- olive oil
- vegan sour cream or plain Greek yogurt (optional)
- srirachaor hot sauce (optional)
Directions:
- Boil brown rice according to the box.
- Cube tofu into pieces and combine with turmeric and pepper to taste.
- In a saucepan over medium heat, pan fry tofu evenly for five minutes in olive oil.
- Add diced peppers into pan and sauté for five minutes.
- In a bowl, add brown rice as a base. Top with tofu, peppers, cherry tomatoes and black beans in each corner of bowl.
- Dollop some sour cream or yogurt into bowl and top with sriracha for an extra kick as desired.
