Ingredients:
- 1/4 c milk
- 2 c sifted all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 c butter
- 1/4 c white sugar
- 1 egg
- 1 tsp ground cinnamon
- 1/2 c honey
- 1 c peeled, shredded sweet potato
- 1/2 tsp baking soda
Directions:
- Preheat oven to 350°F
- Combine sugar and butter or margarine.
- Blend in egg, honey, and sweet potato.
- Sift together flour, baking soda, baking powder, salt, and cinnamon.
- Blend in butter mixture and milk.
- Drop from a teaspoon 2 inches apart onto greased cookie sheets.
- Bake for 15 to 20 minutes until brown.
