Sweet Potato Cookies

Ingredients:​

  • 1/4 c milk​
  • 2 c sifted all-purpose flour​
  • 1 tsp baking powder​
  • 1/2 tsp salt​
  • 1/2 c butter​
  • 1/4 c white sugar​
  • 1 egg​
  • 1 tsp ground cinnamon​
  • 1/2 c honey​
  • 1 c peeled, shredded sweet potato​
  • 1/2 tsp baking soda

Directions:​

  1. Preheat oven to 350°F​
  2. Combine sugar and butter or margarine.​
  3. Blend in egg, honey, and sweet potato.​
  4. Sift together flour, baking soda, baking powder, salt, and cinnamon.​
  5. Blend in butter mixture and milk.​
  6. Drop from a teaspoon 2 inches apart onto greased cookie sheets.​
  7. Bake for 15 to 20 minutes until brown.​
