Tofu Stir Fry

Quick and easy meal packed with nutrients!

Ingredients:​

  • ¼ c onions, chopped​
  • ¼ c mushrooms, chopped​
  • ¼ c broccoli florets​
  • ¼ c carrots, sliced​
  • 4 oz tofu​
  • 2 tsp sesame oil​
  • Topping: crushed pepper (if desired)

Directions:​

  1. Add oil to skillet over medium heat. Add tofu and cook until slightly brown on all sides.​
  2. Add vegetables and turn heat to high. Add 1 tsp of water to help cook without burning.​
  3. Stir occasionally and cook for about 3 minutes. Add more water if needed to prevent burning.​
  4. Serve over rice and add crushed red pepper for a spicy kick.​
