Quick and easy meal packed with nutrients!

Ingredients:
- ¼ c onions, chopped
- ¼ c mushrooms, chopped
- ¼ c broccoli florets
- ¼ c carrots, sliced
- 4 oz tofu
- 2 tsp sesame oil
- Topping: crushed pepper (if desired)
Directions:
- Add oil to skillet over medium heat. Add tofu and cook until slightly brown on all sides.
- Add vegetables and turn heat to high. Add 1 tsp of water to help cook without burning.
- Stir occasionally and cook for about 3 minutes. Add more water if needed to prevent burning.
- Serve over rice and add crushed red pepper for a spicy kick.
