HEALTHY FOODS TO EAT DURING QUARANTINE

Hi! Welcome back to what is our last week of blogging together. During quarantine, I have gotten into making healthier foods. I have also gotten into using Pinterest way too much — at least 4 hours a day. Together, these lead to having endless amounts of super cool, easy to make recipes. I honestly love cooking and baking, even if I’m not the best at it. I find that it is super great for relieving stress and the perfect activity for passing time. Today I’m going to share with you guys my favorite foods (vegetarian, of course), that I’ve been making recently! 

 

BREAKFAST:

  1. Banana Boats-

Banana boats are one of my favorite foods to eat during my morning. You can make this food by taking a banana, cutting it into two horizontal (see picture below), spread peanut butter or oatmeal on both halves, then decorate with toppings of your choice. I personally love putting blueberries and chia seeds on mine. Below I linked the actual Pinterest recipe link so you can find out the official ingredients and more in depth instructions.

  1. Avocado Toast w/ Egg

This toast has honestly become my favorite breakfast recently. I find it so easy as it literally takes me five minutes to make. To make, you make toast (I do whole wheat), make two eggs over-easy, and add avocado slices. I find it really yummy to put pepper on it as well.

  1. Egg Whites w/ Veggie Bacon and Fruit

Lastly for breakfast, I really enjoy eating egg whites and pairing it with fruit and my MorningStar vegetarian bacon. I find that eating this meal fills me up and I also get a great deal of protein starting off my day. To add some fruits, I love adding pineapple.

LUNCH:

 

  1. Protein shake

Since I normally work out after I eat breakfast, I sometimes drink a protein shake for my lunch and pair it with fruit. My favorite protein shake right now is Premier Protein’s High Protein Chocolate Shake. I think it tastes amazing! It’s perfect for when you’re craving sweets too, since it’s super healthy!

  1. Spinach Salad w/ Chickpeas

If I’m feeling a heavier lunch, I’ll opt for a salad with chickpeas. As I’ve said in previous blogs, chickpeas are an awesome source of protein. I pair spinach with chickpeas to create a great salad. For toppings, I’ll sometimes add feta cheese, carrots, and almonds. Almonds are another great source of protein. For dressing, I keep it light with oil and vinegar.

DINNER:

For dinner, my mom makes different food every night, but I’ve included two of my favorites that she makes! She also orders from HelloFresh a lot of the time, which is a company that sends fresh foods with recipes straight to your door! 

 

  1. Stuffed Sweet Potatoes

My absolute favorite healthy dinner is stuffed sweet potatoes. Though you can make stuffed sweet potatoes a ton of different ways, my favorite way is incorporating buffalo sauce and chickpeas. I attached the recipe below, as I find it is a super yummy way for vegetarians to get in their protein!

  1. Tomato & Mozzarella w/ Roasted Brussel Sprouts

I know I always bring up brussel sprouts in my blogs, but trust me they’re worth the hype! If I’m looking for a lighter dinner, I will pair cheese and tomato with brussel sprouts, and maybe even a small spinach salad. I find it makes me really full and it’s a great way to get in those veggies!

  1. I can’t quite remember whether or not I have checked in on this blog before, but if a had not I would be missing out. This is such a great style and I really enjoyed learning about some new recipes to try. I wish I could get my family hooked on brussel sprouts as well. A good brussel sprout can make the meal!

  3. I agree that cooking and baking during quarantine is a great way to pass the time and it also feels like you’re doing something productive! I also love sweet potatoes and brussel sprouts, so I’ll have to try the dinner options, they sound great! Hope you’re staying safe!
