Some language programs at the University of Virginia are using ePortfolios. They created a site, intended as resources for students, which shows portfolios from fellow students in Chinese, French, Italian, and Spanish. You can browse some portfolios here.

Yale University
The Center for Language Study at Yale University has launched an initiative to outfit Yale language learners with e-portfolios so that they can track their progress in learning languages and showcase their accomplishments. They developed a series of video tutorial to help students develop portfolios.
Cornell University
The German language study program at Cornell University has adapted the Common European Framework of Reference and the European Language Portfolio to reflect the needs and quality of students of the program. The department provides introductions to the students and guides. Almost all of the specifics are visible to members of the program only; but a how-to-guide for creating an ePortfolio on a WordPress theme is open to view. Follow the link.
