Introduction | African Americans have the highest mortality rate from coronary heart disease of any ethnic group in the United States. Coronary heart disease increases your risk for stroke, heart attack and can severely decrease your quality of life. Making heart healthy choices is even more difficult when you are travelling or on the go for business. When traveling, your options and time are limited. Here are some ways to make better choices on the go. | Photos of the complications associated with CHD in our target population |
Restaurant | When viewing a restaurant menu, such as this one from Panera Bread, you may look at the Italian combo and believe it is a healthy option because of its high protein content. However, some proteins have high fat in them, specifically the salami and roast beef in this combo. A better option would be the smoked turkey breast for its lean protein status. When looking for meats to choose, turkey and lean chicken are the better options over red meat due to their reduced levels of saturated fat and cholesterol. Focus on replacing unhealthy, saturated fats with healthy fats while dining out. Some other simple tips for reducing saturated fat and cholesterol are to replace cheese and heavy or creamy dressings with olive oils, avocados and nuts. | Menu from Panera Bread with animation to draw attention to different items. |
Convenience Store | On a road trip, it is likely to stop at convenience stores such as Sheetz. It is entirely do-able to find the healthy versus unhealthy choices here. Instead of going to the chips rack, head toward the refrigerated areas. Avoid picking food options in wrappers – they are more likely to have preservatives that lead to high sodium contents. Once you enter the refrigerated areas, items such as Greek yogurt, hard boiled eggs, and vegetables with hummus are also high in protein, but lower in sodium and saturated fat. These snacks also incorporate healthy fats into your diet and are some great choices when looking for a snack on the go. | Video of how to make healthy choices/ read labels quickly in Sheetz downtown |
Hotel Breakfast | Hotel breakfasts are an easy way to eat too much sugar and salt. It is a good idea to watch how much sugar you are eating when you eat at the breakfasts in hotels. Here are some easy ways to avoid overdoing sugar! When choosing oatmeal, add less than a spoonful of brown sugar instead of a heaping one. Add some skim milk to give the sweet flavor if you choose against the brown sugar altogether. If you see pastry items, choose fruits such as bananas, strawberries, grapes, or other berries and melons as a sweet, natural sugar substitute. Steer clear of processed breakfast meats like bacon and sausage to limit your sodium intake. | Pictures/ video from a complimentary hotel breakfast at the Days Inn or at the dining hall buffet. |

Results of pretesting
We each showed the PSA script to our roommates, about 20 people, and got some really great feedback. All of the people we showed our PSA to thought that is was a really good idea to do the three locations because those are all places that businessmen would frequently visit. They did give some good advice because originally, we used words like saturated and unsaturated fats without explaining what the meant. These are things that come second nature to us as nutrition students. They suggested changing the wording to something everyone would understand, or provide better examples of each to make it clearer.
Our script was also lightly reviewed by Mrs. Klees and she helped to fine tune our project. We had lots of sentences that mentioned how to lower fats in general. But we learned that we should teach our audience to pick the healthy fats such as nuts and avocados and avoid just the unhealthy, saturated fats. We changed our script to notify that they can, in fact, eat fats, but that they should now know how to pick the better ones. These were some of our concerns, and we believe that we addressed and fixed this concern.
Concerns and problems
One concern we had was our timeline and how we would plan the project piece by piece. We want to plan in the best way so that our project can reach as many members of our audience as possible. To resolve this, we laid out a plan with the dates we want to get each piece of our project finished. We have dates for when to finish our research, drafts, video making and editing. This has surely helped as to stay on task and will ultimately promote the best PSA for our audience. We are still working on coordinating the dates to film because of everyone’s busy schedules along with the many places we plan to film.
Another concern is that none of us have great video equipment and want to make sure our filming is high quality. When PSA’s do not have high quality videos it can really distract from the message. We will make sure that our audio is clear and the lighting in the videos is appropriate.
