C is for Cauliflower

Cauliflower is often passed over in the grocery store, in favor of its more popular cousin, broccoli – but cauliflower is a great snack or part of a meal with some great health benefits. It contains lots of vitamin C, which promotes skin and brain health. Cauliflower is also a good source of folate, which helps to prevent heart disease and birth defects.

It can be purchased fresh in the produce section year-round, in season from October through April. Cauliflower can also be found in the frozen section, in vegetable blends or on its own. When buying fresh cauliflower, avoid brown spots and look for bright green attached leaves. Fresh cauliflower can be refrigerated in a plastic bag for up to 5 days.

Picky eaters might be interested in cauliflower’s colored varieties – you can find it in yellow, purple, and bright green!

Raw cauliflower cut up into bite size pieces and served with this easy dip makes a great, healthy snack when you want a crunch. Added bonus: Greek yogurt is packed with protein, making this a super snack!

Easy Greek Yogurt Dips                                                                                                                                     recipe adapted from familyfreshmeals.com

Ingredients:

1 (17.6 oz) container of Greek Yogurt (this size usually has a lid)

1 packet of dry dressing mix ( usually about 1 oz)

Directions:

1. Mix together Greek Yogurt and dry mix until well combined. Use right away, or cover and keep refrigerated until really to use.

These can be mixed right in the yogurt container. Keep the lid for easy storage!
