Parsnips are both a fall and winter root vegetable, meaning they grow underground. They have lots of nutrients such as vitamin B6, vitamin C, vitamin E, vitamin K, potassium, folate and fiber. Parsnips have a white color to them, and the whiter they are, the sweeter they will be. They can be cooked in a variety of ways, such as steamed, grilled, roasted, or mashed. They are prepared similarly to carrots.
