A bowl full of vegetables, protein, and flavor!

Ingredients:
- 1 Tbsp olive oil
- 1 medium onion, diced
- 1 bell pepper, diced
- 1 tsp cumin
- 1 clove garlic, minced
- 2-3 tsp diced chipotle peppers (find these in the mexican aisle!)
- 2 cans black beans
- 1 c corn, drained
- 1 can diced tomatoes
- 1 ( 6 oz) can tomato paste (plus 3 of these cans worth of water)
- ½ tsp salt
- ½ tsp pepper
Directions:
- Saute onion and bell pepper with olive oil over medium low heat until tender.
- Add minced garlic and cumin and cook for one minute.
- Add remaining ingredients and bring to a boil. Then reduce to a simmer and cook for 20 minutes, stirring occasionally.
