Vegetarian Chili

A bowl full of vegetables, protein, and flavor!

Ingredients:​

  • 1 Tbsp olive oil​
  • 1 medium onion, diced​
  • 1 bell pepper, diced​
  • 1 tsp cumin​
  • 1 clove garlic, minced​
  • 2-3 tsp diced chipotle peppers (find these in the mexican aisle!)​
  • 2 cans black beans ​
  • 1 c corn, drained​
  • 1 can diced tomatoes​
  • 1 ( 6 oz) can tomato paste (plus 3 of these cans worth of water)​
  • ½ tsp salt​
  • ½ tsp pepper

Directions:​

  1. Saute onion and bell pepper with olive oil over medium low heat until tender. ​
  2. Add minced garlic and cumin and cook for one minute. ​
  3. Add remaining ingredients and bring to a boil. Then reduce to a simmer and cook for 20 minutes, stirring occasionally. ​
