Waffle Breakfast Casserole

A vegetarian breakfast that’s filling, too.

Ingredients:​

  • 4 frozen waffles​
  • ½ c shredded cheese​
  • 4 eggs​
  • 1 c milk​
  • 1/8 tsp black pepper​
  • maple syrup (optional)

Directions:​

  1. Preheat oven to 350°F.​
  2. Arrange 2 of the waffles in an 8×8 baking dish and top with cheese.​
  3. Repeat layer with next 2 waffles and cheese.​
  4. In large bowl, beat eggs with pepper.​
  5. Pour eggs over waffle/cheese layers in baking dish.​
  6. Cover and chill for at least 4 but up to 24 hours.​
  7. Bake uncovered for 30-40 minutes or until a knife inserted in the center comes out clean.​
  8. Sprinkle any remaining cheese, drizzle with syrup and let stand for 10 minutes.​
