Nutrition 251: Introductory Principles of Nutrition

This course is designed for both nutrition and non-nutrition majors to provide a broad understanding of general principles of nutrition. Concepts covered include the essential nutrients, digestion, absorption, transport, and food sources. Additionally, major health issues related to some nutrients that are of public health concern in the United States are discussed in more detail giving insight into cause, treatment and prevention.

               

 

 

Nutrition 583: Nutritional Epidemiology

This course is designed to introduce epidemiology methods in nutrition research to graduate students. Specifically, the course will cover 1) the complex nature of diet and nutrition and epidemiological methods that address the challenges; 2) the epidemiological approaches to understand the relationship between nutrition and diseases; and 3) the interpretation and application of epidemiological data in real-world problems.
