HHD Student Summer Internship with Penn State Extension Nutrition Links

Wanted: Motivated self-starter undergraduate community nutrition or dietetics student from Penn State’s College of Health & Human Development for a unique urban internship opportunity with Penn State Extension in the City of Brotherly Love, Philadelphia. Our office is located in Old City, near the Liberty Bell, Independence Hall and other major historic sites, but you will get to travel to numerous Penn State Extension partner sites throughout the city.

Intern will work directly with Penn State Extension Nutrition Links outreach program, dedicated to teaching basic nutrition classes to underserved adults with school-age children living in low-income neighborhoods in Philadelphia county.

The ideal intern must have a strong interest in all things urban, and be open to navigating the city via public transportation, understanding SNAP benefits and food access systems in a high poverty environment, and meeting and working with people of diverse socioeconomic backgrounds.

Student will work with Nutrition Links supervisor and Free Library of Philadelphia Culinary Literacy Center on a groundbreaking pilot food literacy project. Research components include a survey of best practices in food, nutrition and health literacy and reading level analyses of nutrition program materials. Findings will be utilized to develop an innovative food and nutrition workbook for adult food literacy program participants. Student may also prepare and teach a food and nutrition lesson for our para-professional team.

Please submit letter of interest, resumé and a favorite low-budget recipe using no more than 5 readily available ingredients to: sxw53@psu.edu, jxb70@psu.edu
