I recently interviewed my friend Ashley Grubler who is a veteran paleo and a Nutritional Sciences Minor at Pennsylvania State University. To my dismay, I am unable to post the video, but the transcript is provided below.
Why did you start the Paleo Diet?
I started it because my sister is in her dietetic internship and she stopped eating wheat and simple starches. She said felt better and I thought that I might want to lose weight, get in shape, and have more definition. I wanted to change something. I wanted to see if it worked, so I tried it, and just ended up staying on it.
Do you like the food you eat on the diet? How do you make these simple foods more interesting?
Yes I do, especially because I cook it. I like to bake. You get to bake with all fresh ingredients, so when it tastes good it makes it even better because you know it’s all really good for you. Just knowing it’s not going to upset your stomach or make your face oily and whatnot is nice.
How much would you estimate you spend on groceries each week?
I’d say about $40.
Did you have any struggles starting the diet or staying on it?
No, I actually didn’t. The first things to go were pasta and bread and I thought I was going to have the hardest time getting rid of that, but I realized I didn’t need it.
How long have you been on the diet? How much longer do you plan to be on this diet?
Since January 2013. I’ll probably be on it for the rest of my life.
Have you found any general pros and cons to the diet?
Well for pros I think I have more energy and I’m able to work out longer. For cons I can’t say much because I don’t have any cravings. I don’t miss anything.
