No Bake Pumpkin Pie Recipe

While friends-giving is the perfect time of year to bond with your best friends, it also gives an excuse to make tasty fall treats! There are dozens of delicious fall dishes to choose from, however, it is always a bonus when they are simple and affordable. The No Bake Pumpkin Pie is a super quick, easy, and affordable way to spice up the holiday season and it only takes 10-15 minutes to prepare. The pie is made in creamy layers so there is more flavor and texture. The layers also add a fun twist to the traditional pumpkin pie. Furthermore, since it is a no-bake dish, there will be ample room in the fridge for other delicious friends-giving treats.

Ingredients:

  • 2 cups canned pumpkin (or pumpkin puree)**
  • ½ cup sugar
  • 8 ounces cream cheese softened
  • 2, 8-ounce containers or Cool Whip or other whipped cream
  • 1 tablespoon cinnamon
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon nutmeg
  • 1, 3.4-ouncebox instant vanilla pudding
  • 1 cup milk
  • 2 pre-made pie crusts (graham cracker crust recommened)

Equipment:

  • Mixing Bowl
  • Hand Mixer or Stand Mixer
  • Spatula
  • 2 Pie Tins or Dishes
  • Measuring Cups
  • Measuring Spoons

Directions:

Step 1 (Crust): Use a pre-made crust as a base for the no-bake pumpkin pie. It is a classic touch to use a graham cracker crust, but feel free to use whatever type you prefer. By using a pre-made crust, time and energy can be saved and put toward socializing and enjoying the treat afterwards!

Step 2 (Bottom Layer): To start off, take the mixing bowl and mix the cream cheese, the sugar, and the 8-ounce container of whipped topping. Then, blend the ingredients using a hand mixer or a stand mixer, whichever you prefer. Afterwards, scoop the cream cheese mixture into the pre-made pie crusts as this will be your bottom layer.

Step 3 (Middle Layer): Next, mix the pudding and the milk and stir until it becomes a thick consistency. Then, add 2 cups of the canned pumpkin (or pumpkin puree) and mix. After that, add the pumpkin pie spice, nutmeg and cinnamon and stir until the ingredients are evenly distributed. Now, take the pumpkin mix and place it on top of the bottom cream cheese layer.

Step 4 (Top Layer): Lastly, spread the second 8-ounce container of whipped cream on top to finish off the pies. You can even make a design in the whipped-cream to add more texture!

Topping: By sprinkling the pie with cinnamon or pumpkin pie spice, there is an added aesthetic touch to the delicious fall treat!

Step 5 (CHILL): To allow ample time for the pie to set, chill for at least 1 hour before eating.

**NOTE: Canned pumpkin, also known as pumpkin puree, is only the pumpkin and nothing else added. If you decide to use a pumpkin pie mix, you are doubling the spices included in the recipe’s ingredient list since pumpkin pie mix already includes the spices.
