Learning About Categories

I think I finally understand how categories work. Tags make sense as they are just like the labels I used in Blogger. I was watching one of the demonstration videos when they said that tags are like index entries in a book and categories are like chapter entries in a table of contents. Previously, I had just used tags to organize everything. Now I will have a little more control over the process. But should I go back and re-edit all my old entries?
